  • 2 cups Bomba or Calasparra rice
  • 4 cups seafood stock
  • 1 lb mixed seafood
  • 2 tbsp olive oil
  • 1 tsp saffron threads

Instructions

Heat olive oil in a large paella pan over medium-high heat. Add chopped onions and garlic, sauté until translucent.

Add rice and saffron, stir to coat with oil. Cook for 2-3 minutes until rice is lightly toasted.

Pour in seafood stock, bring to a boil. Reduce heat and simmer for 18-20 minutes.
